Peanut Butter Yo Yos

This has been a Christmas favorite since my college days. I have loved these cookies since my friend, Dwight, gave me a plate of these for Christmas. I begged him for his mom's recipe, and he laughed that there's no recipe, she just makes them. They are super good and easy to make. My boys used to help me make them when they were little, and Christmas isn't complete without these yummy yo-yo's. All you need is a box of Ritz crackers, peanut butter and almond bark. I like to use the vanilla bark when I make them. They are fun to decorate to look like reindeer or snowmen.

Homemade Peanut Butter Yo-yo Cookies make a wonderful gift packed in a pretty box.
(That's if they don't disappear before you get them packaged.) These are great if you're short on time to make Christmas cookies. These are Santa approved!

Christmas Memories

I have been lacking Christmas spirit this year which is a mystery to me! So, while trying to find it I decided to make some cookies I remember from my childhood. We all have those recipes that bring us back to our childhood and the magic of Christmas. My grandma's Coconut Macaroons are one of those recipes. I haven't had them since my grandma passed away so many years ago. I found this recipe in one of my family recipe binders, the one I got as a shower gift when I was a young bride. It's such a treasure to find a recipe that is handwritten by grandma! I haven't made them because my husband and boys are not fond of coconut. I love coconut. Well, I decided to whip of a batch of these hoping to find a little Christmas spirit!

In my grandma's recipe she doesn't say to whip the eggs until frothy and then slowly add the sugar to form a meringue. She of course assumed I already knew that! Then you fold in the coconut. It's a lovely batter that resembles Santa's beard.

I used a small cookie scoop to form the cookies....

These cookies are just how I remember them! Yummy coconut goodness! They bring back memories of grandma's silver tinsel tree and bubble lights. Grandma always had a tray of goodies on the dining room table that we could always help ourselves to.  I'm going to go grab a cup of coffee and another cookie, these are mine, all mine!

Happy holidays!

Forgotten Kisses Cookies

A batch of these yummy cookies were in the oven a couple nights ago... an easy Christmas cookie to make last minute. I'm running out of time to get all I want to do finished, I know I'm not alone. These cookies are quick and easy to last minute. I usually pop them in the oven right before I go to bed. They're one of the favorites in our home and it isn't Christmas until I get these made.

Forgotten Kisses
2 egg whites
1 cup sugar
1 tsp cream of tartar
1 tsp peppermint extract
8 - 10 drops green food coloring
1  6 oz package chocolate chips

Preheat oven to 350.  Beat egg whites until frothy, gradually add sugar.  Add cream of tartar, flavoring, and food coloring to egg whites.  Beat at high speed 10 to 12 minutes.  Fold in chocolate chips, drop by teaspoonfuls onto ungreased cookie sheets.  Set in preheated oven.  Turn off oven and wait 5 hours or overnight before opening the door.

The perfect treat to leave Santa...

Have a great day! Happy Holidays!

12 Days of Christmas, Day 6

Day 6

I live very close to a ski slope named Buck Hill. When my boys were growing up they spent a lot of time there skiing and snowboarding. I drove them there on snow days so that they could meet up with friends and enjoy the new fresh snow with their friends. One of the things that I enjoy the most is the sledding hill. If you ever want to feel like you're five years old, go sledding! I love it because at the base of the hill there's a hot cocoa booth that sells warm cookies and a bon fire to warm yourself by before you head on back up the slope. Feels like a Hallmark movie! Today I'm sharing a cookie recipe, "Buck Hill Cookies". I might have to whip up a batch before Christmas.

Buck Hill Cookies
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup butter
  • 1 egg
  • 1 cup vegetable oil
  • 2 teaspoons vanilla
  • 3 1/2 cups flour
  • 1 cup quick oats
  • 1 teaspoon baking soda
  • 1 tablespoon cream of tartar
  • 12 oz. bag chocolate chips
  • 1 cup rice krispies
Mix sugars, egg, oil, butter and vanilla thoroughly. Stir in flour, oats, baking soda, cream of tartar, chocolate chips and rice krispies. Cover and chill dough. Drop by teaspoons 2 inches apart onto parchment lined cookie sheets. Bake at 350 for 8-10 minutes. Makes 5-6 dozen cookies. At Christmas I usually also put red and green M & M's into the cookie dough.

I hope that you enjoy todays installment of my 12 days of Christmas. Enjoy the recipe and I hope you find some time to enjoy a sweet treat and a cup of cocoa.

12 Days of Christmas, Day 4

Day 4

Welcome to the fourth day of the Quilt Doodles 12 Days of Christmas. There are still lots of projects and other fun goodies to share with you over the next few days. Today I thought I would share with you one of my favorite recipes. I love meringue cookies and usually make a mint chocolate chip meringue cookie for my guys but I love this recipe too! This is a festive cookie for your cookie tray. What I enjoy is that you whip up the meringue, put the cookies in the oven and then go about with your other items on your Christmas to do list. I know we all have one of those! Mine is still quite long.... uggg.

Peppermint Meringues
from: allrecipes.com

2 egg whites
1/8 teaspoon salt
1/8 teaspoon cream of tartar
1/2 cup sugar
2 peppermint candy canes, crushed

In a mixing bowl, beat egg whites until foamy. Sprinkle with salt and cream of tartar; (I also added 1/2 teaspoon peppermint extract);  beat until soft peaks form. Gradually add sugar, beating until stiff peaks form, about 7 minutes. Drop by teaspoonfuls onto ungreased foil lined baking sheets; sprinkle with the crushed candy.  (I also sprinkled red edible glitter on the cookies) Bake at 225 for 1-1/2 hours.Turn off heat; leave cookies in the oven with the door ajar for at least 1 hour or until cool. Store in an airtight container.  I doubled the recipe and got about 4 dozen cookies.

Enjoy!  Happy Holidays!

The Virtual Cookie Exchange Blog Hop

I love to bake and with the Holidays just around the corner, my kitchen has been a busy place. The smells of chocolate and vanilla have been warming my home. The Saturday after Thanksgiving is fondly known in my family as 'Cookie Day'. My mom started this tradition years ago after grandma passed away. My grandma loved to bake and is fondly known for all of the goodies she used to make. We loved her mocha bars and have yet to find a recipe that lives up to hers, hers wasn't written down, she cooked from memory as many good cooks did in her time... Cookie day is when my sisters and I all get together and bake at mom's house. (I have four sisters... so it's a houseful!) We all gather with our shopping bags of ingredients, mixers, baking pans and recipes. It's a marathon of baking! We get sooooo much done and it's such a thrill to see my nieces and nephews help with the baking and cookie decorating too. I am known for my caramel and that is the first thing I always make. I make 8 batches and my nieces and nephews help me wrap it all. Of coarse there's complimentary caramel tasting as they wrap. For many years I would toil over the oven stirring my caramel, praying to god that it wouldn't scorch. If it scorched, I'd throw in pecans. Needless to say, I had many batches with pecans. A few years ago I found my Microwave Caramel recipe and I love it! It doesn't scorch! A perfect batch every time!!! You may have to adjust your microwave time depending on the strength of your oven. For my mom's microwave I add 3 minutes...

I don't shape mine as wreaths, they are just a pretty blob of goodness. They don't last very long on the cookie tray. The kids love them! I like them because they are quick and easy to make and with so many bakers at mom's house, I try not to have 'baked' recipes so that the oven is free for my sisters and nieces.
